Methode
Cornstarch, not batter, for crispness without frying
Toss dry chicken pieces in a thin coat of cornstarch. In a hot oven or air fryer, that starch crisps into a shatter-thin shell that grips the glaze, giving you the takeaway texture with a fraction of the oil. Shake off the excess so it crisps rather than clumps.
Air-fry or oven-roast hot
Air fryer at 200C for twelve to fourteen minutes, or a very hot oven on a preheated tray. You want the coating to set and brown before the chicken overcooks. Give the pieces space, a crowded tray steams and the shell goes soft.
Use real orange, juice and zest
Bottled orange sauce leans on sugar and orange flavouring. Half a cup of fresh juice plus the zest of one orange gives you actual citrus, floral and slightly bitter, which is what stops the sauce being one-note sweet. The zest carries the aromatic oils, do not skip it.
Reduce the sauce until it coats a spoon
Simmer the juice, zest, soy, honey, vinegar, garlic and ginger, then thicken with a small cornstarch slurry. You want it glossy and thick enough to cling, about three minutes. Taste and balance, more juice for tang, a touch more honey only if it is sharp.
Toss to coat right before serving
Combine the crisp chicken and the hot glaze in the last thirty seconds and serve straight away. Let it sit and the coating softens. This is a dish that rewards timing, have the rice and greens ready before you toss.
A pinch of chili for balance
A small pinch of red pepper flakes in the sauce is not about heat, it is about cutting the sweetness so the orange reads brighter. Leave it out for children, but a little makes the whole plate taste more grown-up.

- Is this much lower in sugar than takeaway?
- Yes. Restaurant orange chicken can carry twenty to thirty grams of sugar per serving. This uses one tablespoon of honey plus the natural sugar in fresh orange juice across four servings, landing around seven grams of added sugar per plate.
- Can I make it gluten-free?
- Yes. Use tamari in place of soy sauce and confirm your cornstarch is certified gluten-free if you are sensitive. The rest of the recipe is naturally gluten-free.
- Breast or thigh?
- Thigh stays juicy and forgives the high heat needed to crisp the coating. Breast can work if you cut even pieces and watch the timing closely, but it dries faster. For a hands-off result, use thigh.
