Thin pans warp and scorch; the vegetables steam in the dip and burn on the high spot. A heavy aluminum half-sheet sits flat, holds heat, and gives you the even browning that makes a one-pan dinner worth cooking. It is the cheapest upgrade that changes the most dinners.

  • 4bone-in skin-on chicken thighs
  • 1 largesweet potato · cubed
  • 1 headbroccoli · florets
  • 1red onion · wedges
  • 3 tbspolive oil
  • 2 tspsmoked paprika
  • 1 tspgarlic powder
  • 1 tspground cumin
  • 1/2lemon · juiced at the end
  • 2 tbspfresh parsley · chopped
  • kosher salt · to taste

Method

  1. Stagger the timing, the whole trick of sheet-pan cooking

    Sweet potato cubes need 28 minutes; broccoli needs 18; onion needs 22. Start the sweet potato alone for 10 minutes at 425F, then add the rest. Everything finishes together, nothing is raw or charred.

  2. Bone-in skin-on thighs, skin up

    Four bone-in skin-on thighs, patted dry, salted, set skin-up on the tray so the fat renders down over the vegetables. Boneless cooks faster and drier; if you must, add it at the 10-minute mark with the vegetables.

  3. Olive oil, salt, and a dry spice rub

    Toss the vegetables in olive oil, salt, smoked paprika, garlic powder, and cumin. No honey, no sugar, this is what keeps it Whole30 as well as paleo. The smoked paprika does the work a glaze usually would.

  4. Do not crowd the tray

    One layer, space between pieces. Crowded vegetables steam and go gray. If it is tight, use two trays; the extra wash-up beats soggy broccoli. Crank to 425F and leave it alone.

  5. Lemon and herbs at the end

    Off the oven, squeeze half a lemon over everything and scatter parsley. The acid lifts a roasted tray that can otherwise taste flat. This is the finishing move on almost every recipe we publish, and it matters here.

Refrigerator: 3 to 4 days, sealed. Freezer: up to 3 months. Reheat covered to retain moisture.

Frequently asked

Is this Whole30 as well as paleo?
Yes, as written. There is no sugar, dairy, grain, or legume anywhere in it, and the spice rub is just spices. That is why it is a good first recipe for either pattern; it sits in the overlap.
Can I swap the sweet potato?
Yes. Butternut squash, parsnip, or carrot all roast on the same timeline. If you want it lower-carb (keto-leaning), swap the sweet potato for cauliflower and add it with the broccoli, not at the start.
How does it reheat for meal prep?
Four days in the fridge. Reheat in a hot oven or air fryer, not the microwave, so the chicken skin and the vegetable edges crisp again instead of going soft.
