Method
Freeze the fruit instead of adding ice
Frozen banana and berries give you a thick, cold, milkshake texture without ice, which just waters the smoothie down as it melts. Keep a stash of peeled ripe bananas in the freezer for exactly this. Frozen fruit is the difference between a thick smoothie and a thin one.
Greek yogurt does most of the protein work
Three-quarters of a cup of Greek yogurt brings creaminess and around eighteen grams of protein before any powder. It also gives a pleasant tang that balances the sweet fruit. Yogurt-based smoothies feel like a meal where juice-based ones spike and crash.
Powder is optional, and quality matters
If you want to push past thirty grams of protein, add a scoop of a protein powder you actually like the taste of. A grassy, chalky powder ruins the drink no matter what else is in it. If your yogurt already gets you where you want to be, skip the powder entirely.
Add a fat and a fibre for staying power
A spoon of almond butter or chia seeds turns a smoothie from a sugar hit into something that keeps you full. The fat and fibre slow the absorption of the fruit sugars, so you are not hungry again in an hour. Chia also thickens the drink as it sits.
Layer the blender for a smooth blend
Liquid first, then yogurt and soft ingredients, then frozen fruit and any greens on top. This helps the blades catch and pull everything down, giving a smooth result without stopping to scrape. Blend on high until completely smooth.
Hide greens without tasting them
A handful of spinach disappears into a berry smoothie, adding volume, fibre and micronutrients with no green taste, the berries mask it completely. It is the easiest way to get a serving of vegetables into a sweet drink.

- Do I need protein powder to hit 30 grams?
- Not necessarily. Greek yogurt and milk together get you close to thirty grams on their own, and a spoon of nut butter and the chia add a little more. A scoop of protein powder is an easy way to push higher, but it is optional if your base is already protein-rich.
- Why does my protein smoothie taste chalky?
- That is almost always the protein powder. Cheaper or heavily processed powders leave a chalky, grassy aftertaste. Use a powder you have tasted and like, lean more on Greek yogurt for the protein, and add banana and nut butter, which round out and mask any powder texture.
- How do I make it dairy-free?
- Use a thick plant-based yogurt, such as a coconut or soy Greek-style yogurt, and unsweetened plant milk, and choose a plant protein powder if you use one. Soy-based options tend to give the most protein and the creamiest result.
- Can I make it ahead?
- Smoothies are best fresh, but you can freeze all the solid ingredients in a bag as a smoothie pack, then blend with the liquid in the morning. A fully blended smoothie will separate and thin out, though a good shake and the chia thickening can revive it within a few hours.

Enchiladas: Fry the Tortillas, Fry the Sauce, Bake Them Briefly
Nearly every bad enchilada is the same enchilada: a raw corn tortilla soaked in canned sauce and baked until the whole tray turns to porridge. Two steps fix it permanently. Pass each tortilla through hot oil for twenty seconds so it waterproofs, and fry the blended chile sauce in fat before it goes anywhere near the pan. Ninety minutes, most of it the sauce, and twenty of it in the oven.
