Primal Kitchen avocado-oil red wine vinaigrette
Most bottled dressings are sugar and seed oil. Primal Kitchen uses avocado oil and no added sugar, which keeps a Cobb genuinely keto without a homemade-dressing project on a workday. If you have five minutes, three parts olive oil to one part red wine vinegar with Dijon and salt beats any bottle.
Ingredients

- 200 gcooked chicken · rotisserie, pulled
- 3 rashersbacon · cooked crisp
- 1avocado · diced
- 1 cupcherry tomatoes · halved
- 1/4 cupblue cheese · crumbled
- 4 cupsmixed greens
- 3 tbspolive oil
- 1 tbspred wine vinegar
- 1 tspDijon mustard
- kosher salt · to taste
Method
Eggs first, the only real cooking
Two eggs into already-boiling water for 9 minutes, then straight into ice water. Nine minutes gives a set-but-not-chalky yolk and peels clean. This is the only heat in the whole dish.
Use good cooked chicken
Rotisserie chicken pulled into chunks, or leftover roast thighs, about 200g. The Cobb lives or dies on the chicken being moist; do not use sad pre-diced deli cubes if you can pull a rotisserie bird instead.
Lay it out in rows, dress at the table
Greens as the bed, then rows of chicken, halved egg, crumbled bacon, diced avocado, cherry tomato, and blue cheese. Rows, not a toss, so it photographs and so the avocado does not turn to paste. Dress when you eat, not before.
Bacon done crisp and drained
Three rashers cooked crisp, drained on paper, chopped. Crisp bacon adds the salt and crunch a Cobb needs; floppy bacon disappears into the salad. Save the fat for tomorrow's eggs.

Storage
Refrigerator: 3 to 4 days, sealed. Freezer: up to 3 months. Reheat covered to retain moisture.

- About 5g net carbs, mostly from the tomato and avocado. Drop the tomato and you are near 3g. The protein (38g) comes from the chicken, egg, and bacon stack, no powder involved.
- Can I meal-prep it?
- Yes, with the dressing and avocado kept separate. Greens, chicken, egg, bacon, and tomato hold three days in a box. Add avocado and dressing at the desk so nothing goes brown or soggy.
- Is blue cheese necessary?
- No, but it is the classic. Feta, shredded cheddar, or goat cheese all work and all stay keto. If you skip cheese entirely, add a second egg to keep the protein and richness up.
