Why this works
Every recipe on this site ships with an explanation of the technique decisions, why sear then braise, why the acid goes in at the end, why the fat renders before the aromatics. The method below is those decisions, in order.
Clearspring brown rice miso (UK) or Miso Master (US)
Brown rice miso is mellower and more savoury than white miso, and works for this soup at half the dose. White miso is sweeter and turns this soup into something cloying. If you only have white miso, halve the quantity and add a teaspoon of soy.
Ingredients

Method
350ml hot water, not boiling
Miso must not boil. Boiling miso strips out the lactobacillus and dulls the flavour to a salt note. Heat water to about 80°C (the kettle clicks off, wait one minute) before the miso goes in.
1 tablespoon miso, dissolved in a small bowl first
Spoon the miso into a small bowl, ladle in a couple of tablespoons of the hot water, whisk to a smooth paste. Then back into the main pan. Adding miso paste directly to a pan gives you streaks and lumps that never quite blend.
120g salmon, skin off, into the warm broth
A piece of salmon, skin off, cut into 2cm cubes. Drop into the warm (not boiling) broth. Eight minutes off the heat with the lid on. Salmon poaches softly, doesn't toughen, holds its color.
Half a block of silken tofu, in cubes
Silken, not firm. Half a 300g block, cut into cubes in the packet, slid in. Heats through in 90 seconds. Adds 6g of protein and a velvety counterpoint to the salmon. The reason the bowl reads as a meal not a starter.
A handful of baby spinach, wilted at the end
A fistful of baby spinach into the bowl off the heat. Wilts in 30 seconds in the residual warmth. Don't add to the pan, it overcooks and turns olive-green.
Spring onion, sesame oil, chili flakes if you like
One sliced spring onion, half a teaspoon of toasted sesame oil, a pinch of chili flakes if you tolerate them. The chili is optional and easy to skip on a small-appetite night; the spring onion and sesame oil are the move.
Variations
Substitutions and adaptations land with the photography shoot. The method holds across most reasonable swaps.
Storage
Refrigerator: 3 to 4 days, sealed. Freezer: up to 3 months. Reheat covered to retain moisture.

- What we tried
- White miso, salmon dropped into boiling broth, no dashi base, lemon at the end.
- What happened
- Miso flavour turned flat, boiling killed the cultures. Salmon overcooked in 90 seconds and went chalky. White miso made the soup uncomfortably sweet against the salmon.

- Switched to brown rice miso, dropped water temperature to ~80°C, poached the salmon at 60°C instead of boiling.

- What we tried
- Brown rice miso, 80°C water, salmon poached gently. Skipped the dashi to keep it simple.
- What happened
- Texture was right, miso flavour held, but the broth tasted thin without dashi. Umami carried only by the miso, no depth underneath.
- What we changed
- Added a 5-minute kombu infusion at the start (or a teaspoon of instant dashi powder) before the miso went in.

- What we tried
- Kombu-infused water, brown rice miso whisked off-heat, salmon poached at 60°C, sesame oil at the table.
- What happened
- Broth had depth, miso flavour was preserved, salmon was custardy. Repeated three times across two weeks with consistent results.
- What we changed
- This is the published recipe. The kombu infusion is the upgrade that made the bowl repeatable.
Frequently asked
- Why is sodium so high?
- Miso is a salt-based ferment. 1 tablespoon of miso plus the trace soy in good salmon brings sodium to about 720mg per bowl, which is the upper end for a single meal. If you're being co-managed for blood pressure, halve the miso (use 1.5 teaspoons) and check the flavor before adding more.
- Can I do this without salmon?
- Yes. Two soft-boiled eggs in their place gives you a 22g protein bowl. Or 200g of poached firm tofu for a 24g vegan version. The broth carries the dish.
- Is this enough for dinner?
- On a small-appetite night, yes, this is dinner. With a normal appetite it works as a starter. Bulk it out with a side of brown rice (half cup) for a 38g protein, 380 kcal dinner if you're not in a low-volume eating window.
